Vegetarian Thai Green Curry

Yet another Thai dish in the books, this green curry recipe is super yum and extremely easy to make! Serve with a side of brown rice and you're totally set. Check out my recipe below!


What you'll need:

1 can coconut milk (unsweetened)

1 jar green curry paste

Soy sauce

Chili garlic sauce

Sriracha sauce

Salt

pepper

Tofu

Fresh garlic

Fresh ginger

Veggies: any you want, I used red onion, green pepper, broccoli, mushroom, green chilis


Steps:

1. Heat a pan and sauté green chilis and veggies in oil, garlic, and ginger

2. Add one can coconut milk and 2.5 tbsp green curry paste

3. Add 2 tbsp soy sauce, 1.5 tbsp chili garlic sauce, 2 tsp salt and 2 tsp pepper

4. Bring curry to simmer and add in tofu

5. Mix for few more minutes and serve over rice of choice


Air Fryer Tofu:

Press one cube tofu for ~30 minutes

Cut Tofu into cubes and in a large bowl add 2 tbsp soy sauce, 2 tbsp sriracha sauce, 1 tsp fresh ginger, 1 tsp salt and let tofu marinate for 15-20 minutes

Add to air fryer at 380 for 10 minutes (shake half way through)
