Cilantro Lime Chicken Meatballs and Mexican Rice

I definitely think that ground chicken is the such a great ingredient to use to cook up simple and delicious dishes. And on top of that, the air fryer UGHHHH so freaking perfect. I literally don't even know what I would do without it now. Anyway...if you want to whip up a quick dish for Mexican night, this one is unique and totally mouthwatering! Check it out below :)


Cilantro Lime Meatballs:

1lb ground chicken

cloves garlic minced

1 fresh diced jalapeño

2 tsp salt, 2 tsp pepper, 1 tsp chili powder, 1 tsp garlic powder, 1 tbsp taco seasoning

1/4 cup Mexican cheese

1/4 sweet onion

1 eggs whisked


1. Mix all together, create balls, and refrigerate for 30 min

2. Air fry for 15 min on 350 (be sure to preheat!)


Mexican Rice:


1. In a pan, sauté black beans, corn, sweet onion, and fresh jalapeño in fresh garlic and oil

2. Add one can of diced tomatoes and bring mixture to a simmer

3. Add 2 tsp salt, 2 tsp pepper, 1 tbsp taco seasoning, 1 tbsp Cholula hot sauce, and 1/4 cup of pickled jalapeño juice

4. Mix in some cilantro and Mexican cheese and you're good to go!
