Mexican Style Corn- Elote

To go with the absolutely mouthwatering pork tacos my brother made, I decided to make a side dish and what better than some good ole' Elote. This is a quick and easy side dish that is packed with flavor, absolutely perfect for Mexican night!
What you'll need:

- 2 cans of whole kernel corn
- Red onion
- Fresh jalapeño
- Butter (1,5 tbsp)
- Mayo (1.5 tbsp)
- Seasonings (1 tsp): onion powder, garlic powder, salt, pepper, paprika, chili powder
- Lime
- Cilantro
- Oaxaca cheese
Steps:
1. Chop half a red onion and 1 jalapeño pepper and put to the side
2. In a small bowl, mix melted butter, mayo, and 1 tsp of each seasoning
3. Heat a pan, add oil and sauté onion and jalapeño for about 1-2 minutes
4. Add corn and mix for another few minutes
5. Add sauce mixture to the pan, squeeze in half a lime and mix for 1 minute
6. Garnish with cilantro and Oaxaca cheese
