Quinoa Mexican Enchilada Bake

I'm out here trying to diet when my family decides to order Taco Bell. Obviously that made me crave Mexican food in general but I was good and said no to the Taco Bell. Instead, I decided to get creative and make my own Mexican concoction. My mom ended up eating more of my dish than her own Taco Bell so I would say that means I'm #winning, wouldn't you?!
What you'll need:

- One cup uncooked quinoa
- Bean salad (canned) or you can make the bean salad with corn, black beans, onions, and green pepper
- Pickled jalapeño (or fresh if you like it better) AND jalapeño juice from jar
- Fresh garlic
- Cholula hot sauce
- Salt
- Enchilada sauce (canned)
- Mexican Cheese
- Spring onion
Steps:
1. Boil quinoa for about 12 min to bring to a fluff
2. Sauté bean salad in garlic and oil, add a pinch of salt
3. Add quinoa to sauté and mix
4. Add Cholula hot sauce and jalapeño sauce and mix in
5. Place mixture into a small pan
6. Spread enchilada sauce on top of the entire quinoa mixture
7. Add Mexican cheese layer on top of the enchilada sauce
8. Bake for 5-7 minutes at 350 degrees
9. Garnish with spring onion
