Quick Veggie Burrito Bowl

This is the easiest meal to whip up if you're feeling some Mexican flavors. Not only that but bowls serve as a healthy alternative from using tortilla. Usually you can make this dish with ingredients straight from your pantry without having to go out and buy anything!


What you'll need:

- Red onion

- Green pepper

- Tomato

- Fresh garlic

- Jalapeño (I used pickled but fresh works too)

- Black beans

- Corn

- Seasonings: taco seasoning, salt, pepper

- Cholula hot sauce

- Chipotle sauce

- Lime

- Mexican Cheese

- Brown rice

- Cilantro

- Secret ingredient: I add pickled jalapeño juice to spice it up and add some tang!


Steps:

1. Sauté red onion and green pepper in garlic and oil

2. Add chopped jalapeño, black beans and corn

3. Season with taco seasoning, salt, pepper, Cholula hot sauce, one full lime squeezed, and a little jalapeño juice (cook for 1-2 minutes)

4. Add mixture to bed of brown rice or lettuce

5. Top off with Mexican cheese, diced tomato, chipotle sauce, and cilantro
