Eggplant in Garlic Sauce

Along with the Thai Basil Chicken, this dish is such a hit in my house, it has also become almost a weekly thing. The flavors in this dish will make you want to keep eating. If you hated eggplant before, get ready to change your mind!!!
Eggplant prep:

- Cut 1 eggplant into small pieces
- Coat in 1-2 tsp of salt and 1/2 tbsp of all purpose flour
- Add oil to pan and cook eggplant till softened and browned (5-8 min)
Sauté:
- Red onion
- Green chili
- Fresh garlic
- Fresh ginger
Sauce:
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1-2 tbsp water
- 1 tbsp all purpose flour
- 2 tsp sugar
Steps:
1. Sauté eggplant (5-8 min and put to the side)
2. Sauté onion and chilis in garlic, ginger and oil for 1-2 minutes
3. Re-add the cooked eggplant to the sauté and mix
4. Add sauce and lower the heat
5. Add a little water the keep with saucy consistency and cover pan with lid, allowing sauce to thicken and cook for a few minutes
6. Serve over brown rice
