2 Cheese and Onion Enchiladas

There is this restaurant in NJ called On The Border and its basically the spot for Mexican cuisine. The place on the weekend is constantly packed, probably because the food is to die for in my opinion. My mom, being the vegetarian that she is, has and always will only order one thing and will place the order in this exact way... "Hi, I'm a vegetarian, can I please have 2 cheese and onion enchiladas, vegetarian"... LOL can you tell that she's a vegetarian?! From then on, my family has recreated these simple enchiladas at home and has proceeded as the mainstay Mexican dish for years. TBH it is REALL GOODD
What you'll need:

- Flour tortillas (as many as you want to make)
- Mexican cheese
- Sweet or yellow onion
- Pickled or raw jalapeño
- Enchilada sauce
- Tomato
Steps:
1. In a large bowl, mix chopped onion, chopped jalapeño, and Mexican cheese
2. On a tortilla, spread enchilada sauce and cheese mixture and roll the tortilla
3. Continue this process for as many enchiladas you'd like to make
4. Place enchiladas in a cooking dish and lather with enchilada sauce, diced tomatoes and Mexican cheese
5. Cover cooking dish with enchiladas with foil
6. Place enchiladas in the oven and cook for 20 minutes at 350 degrees
